We suggest the pairing with vegetarian dishes, fish soup, pastas and risotto, baked or grilled fish. You can “forget” it in your cellar for years!
The Chardonnay is fermented in French oak barriques, while the Vespaiola and the Sauvignon is fermented in stainless steel tanks. The result is a complex and mineral wine, with tropical fruit notes, apricot and vanilla. In the mouth it is rich, full, mineral and lingering.

Location of vineyard: DOC Breganze hills
Exposure and type of land: volcanic and tuffaceous hills
Vine layout: perfectly ripe harvested grapes, soft pressing with nitrogen coating.
The three varieties are separately vinified; Sauvignon and Vespaiolo ferment in steel, whereas Chardonnay ferment in French oak barrels partly new and partly used
Aging: Chardonnay ages in barrels for 5 months on its lees, whereas Sauvignon and Vespaiolo are in steel only. The three varieties are put together in steel tanks in spring and then rest together in bottles for at least one year
Organoleptic notes

Color: intense straw yellow

Nose: complex and pleasant, mineral with hints of exotic fruit, apricot and sweet vanilla

In the mouth: rich, rounded, full, the vanilla note is persistent and the minerality perceived on the nose is rediscovered, the scent is pleasantly long
